Biscuits and Gravy Casserole is an amazing mix of biscuits, sausage, eggs, cheese, and country gravy in one perfect dish. It will make any Southerner proud!

Last week I found arecipe for a breakfast casserole using gravy and biscuits and it was good, but I was missing the eggs! I decided to make my own spin on it and make it a little more traditional or a little more southern should I say. Biscuits with country gravy are one of my all-time favorite breakfasts and I will order that over anything given the chance. If you like biscuits and sausage gravy you are gonna LOVE this biscuits and gravy casserole.

This biscuits and gravy breakfast casserole is light and fluffy, honestly, it’s just right.

Thebiscuits come out airy and browned. It has everything you want in a southern breakfast including fluffy eggs, sausage, and creamy country gravy. It’s a southern breakfast in one dish and it might just make you want to become a southerner if you’re not!

Iuse pre-cooked sausage crumbles from Jimmy Dean to save time but you can cook up a roll of sausage first if you wish. I use my favoritekitchen shearsBiscuits and Gravy Casserole with Sausage The Original Recipe (3) to cut up the biscuits and it takes me about 10 minutes to throw this breakfast casserole together.

I make this biscuitand gravy casserole with Pioneer Brand Country Gravy Mix, it is the best country gravy mix I have found. I prefer the peppered variety but if you don’t like a lot of pepper just go with the original.

Ingredient List

  • 1 package of sausage your choice
  • 1 package of Pioneer Brand Peppered Sausage Country Gravy Mix or Regular Country Gravy Mix
  • 1 cup Cheddar Cheese
  • 6 eggs
  • 1/2 cup milk
  • 1/2 tsp Salt and Pepper
  • 1 16 oz. can Pillsbury Grands Biscuits

Directions

  1. Preheat oven to 350 degree's.

  2. Take a 9x13 pan and spray it with non-stick cooking spray.

  3. Cut each biscuit into 4 pieces and line bottom of pan.

  4. Brown the sausage and scatter over biscuits.

  5. Sprinkle with Cheddar Cheese.

  6. Whisk eggs and milk with a pinch of salt and pepper and pour it over the biscuits and cheese.

  7. Make Gravy mix per package directions and drizzle onto the casserole.

  8. Bake in the oven for about 30-45 minutes.

Update on this recipe from Miss Information Reader Lee –Just wanted to let everyone know that this delicious biscuits and gravy casserole recipe freezes amazingly. I’ve had it in the freezer for a little over a week and it comes out almost exactly like it was fresh if cooked on 1 lb defrost in the microwave. Of course, reheating this in the microwave is going to make the biscuit part drier than it was when it was fresh, but it doesn’t change the consistency of the recipe enough that it’s not still amazing. I’ve got the casserole cut up into bar-sized portions and I would recommend putting a portion in the refrigerator overnight to avoid having to heat it up in the microwave for so long or perhaps to cook it covered on the stove top on low setting.

  3. Hi Kelley! I just have to thank you for this recipe! I've made it dozens of times. At home, for a breakfast potluck, while visiting my sister, at family get togethers. EVERYONE loves it. I love that it's so easy to put together and I don't have to slave in the kitchen to make a meal to feed a lot of people. It's now a go to for me, my coworker and my sister!     1. Yes, it can be reheated and I would cover with aluminum foil to keep it from browning further. You can also scoop some onto a plate and microwave it to reheat it.

    1. I tried it in a crockpot once and when it was on warm it dried it out and shriveled up. I have used a thermal casserole carrier with heat packs with success before.

I found that when microwaving a leftover portion, the biscuits can be kept moist nicely by covering the plate with plastic wrap.This recipe is great in its pure form, but with the egg mixture, it's so easy to make "omelette" variations (small can of mushrooms, finely chopped onion and even finely chopped green pepper would work well)

I made this for breakfast this morning and I am literally jumping up and down like Tom Cruise on the sofa - it WORKED! It was amazing! No gummy biscuits, it was delicious.   16. Hi, do you throw in cooked sausage with grease and all or separate out? If you don't throw grease in do you ever make sausage gravy from it instead of making the pack variety? Thanks for your help!

    1. Hey, Dan if you cook sausage instead of using the precooked crumbles you will want to drain it first. I have not tried to do that but I'm sure it would be delicious! You will want to have about 1 1/2 cups of gravy if you make it that way.

  17. How would you go about making this in a crockpot? Baking times, etc.....I tried this in the oven and loved it so much, thought I would give it a try to feed guests coming for my daughters wedding.

    1. Hey Denise, I tried it in a crockpot and it overcooked when I set it for 6 hours on low. IF you can hook your crockpot up to a timer I would try it on low for about 3 hours and that should do it otherwise everything else should be the same. Let me know how it works.

  20. Hi! Just wondering if anyone has tried this in a crockpot overnight? Mornings are a bit hectic around here and I was looking for something to take to a brunch right after the kids get on the bus. Making it in a crockpot would be the easiest way to get them and me out the door w/my sanity intact!

    1. Not that I know of. If you have a Ninja you for sure could because it lets you bake. I am sure it would do fine you would just have to watch it. My guess is that it would take about 2 -2.5 hours but again that is just a guess. Let me know if you try it and I will add those directions to the post!

  29. My daughter has been wanting biscuits and gravy for awhile now. I decided to make this "breakfast for dinner" tonight and they family loved it. Now we have leftovers for breakfast tomorrow morning! I served this with a fruit salad. It was easy to put together. I will make it again.

  30. I made this for brunch today and it was delicious! My three young boys loved it too. I used the frozen bag of Pillsbury biscuits just because I love the way those biscuits taste on their own. I let them thaw completely though and then cut them up. I also used half and half instead of milk. I will definitely be making these again!.

  47. What size pkg of the gravy mix. I buy a different brand and it makes 2 gallons. About how much gravy is there once you make it. Maybe 2 cups, 3 cups?

      1. UhOh.....just read this. I have this recipe in the oven right now BUT I did NOT cook or thicken gravy before pouring over the casserole. Just wisked gravy package together with the milk/water solution and poured it over. Do you think it will need more baking time? I guess I will find out.
