There are a few “secret” ingredients to this Vegan Ricotta, which revolve (1) texture and (2) taste.

  • For texture, we’ll use a combination of Firm Tofu for light-ness and Soaked Cashews for creaminess and densiry
  • For taste,we’ll use Nutritional Yeast for umami flavoring, plus some lemon juice and zest for tang.

This recipe also includes optional savory ingredients; if you’re looking for a plain (or sweet) ricotta you can simply leave them out, but the addition of garlic and herbs makes this plant-based cheese alternative even more delicious in savory recipes!

This vegan ricotta recipe comes together with only 10 minutes of prep time! I love to use my food processor with its S-blade attachment to get a nice and fluffy texture, but you could also use a high-speed blender with a tamper and blend on high, scraping the sides occasionally with a spatula as needed.

Vegan Ricotta Cheese Recipe

Made with only 7 plant-based ingredients, this Vegan Ricotta Recipe is easy, healthy, and delicious! Perfect for Lasagna, Stuffed Shells, and more.

  • Author: Caitlin Shoemaker
  • Prep Time: 10 Minutes
  • Total Time: 10 minutes
  • Yield: ~3 cups
  • Category: Side
  • Method: No Bake
  • Cuisine: American
  • Diet: Vegan

Ingredients

Scale

  • 1 14 ounce (400 g) block firm tofu, pressed*
  • 1 cup (140 g) cashews, soaked for at least 4 hours*
  • 2 tablespoons nutritional yeast (see notes for “sweet” variation)
  • Juice of 1 lemon
  • 1/2 teaspoon lemon zest (optional)
  • 1 teaspoon salt

Optional Savory add-ins:

  • 3 to 5 cloves garlic (or 1 tsp garlic powder for a milder flavor)
  • Black pepper, to taste
  • 2 teaspoons Italian seasoning (or other spices/herbs of choice)

Instructions

  1. Whip it Up: Set up a food processor with an S-blade attachment and add the tofu, cashews, lemon zest, lemon juice, nutritional yeast, and salt. Add the garlic, black pepper, and Italian seasoning as well, if you are going for the savory version. Process the mixture for for 45 to 60 seconds, scraping the sides of the food processor with a spatula as necessary. The final mixture should be creamy and fluffy, with a slight texture that melts in your mouth.
  2. Serve: Enjoy as-is as a dip, or use as desired in any recipe of choice! Store leftovers in an airtight container in the refrigerator for up to 7 days.

Notes

  • Tofu:use a tofu-press if you have one, or wrap your tofu around a clean kitchen towel and place a heavy object on top. Let it sit for at least 30 minutes, ideally. I prefer the softer texture of firm tofu for this recipe, but extra firm tofu will work as well.
  • Cashews:If you forget to soak your cashews ahead of time overnight, you can (1) cover them in boiling water and let sit for 20 minutes, or (2) cover them with water and microwave for 3 minutes, then let sit for 3-5 minutes before draining. If you have a cashew allergy, you can also replace the cashews with blanched slivered almonds, macadamia nuts, or pine nuts.
  • Nut-Free:double the amount of tofu, and add 2 tablespoons of olive oil to the mixture to keep the ricotta creamy. This version will be slightly less fluffy, but still delicious!
  • Sweet:you can use this ricotta in sweet applications as well, but reduce the nutritional yeast to only 1 tablespoon

FAQs

What is vegan ricotta made of? ›

In general, there are two main methods for making vegan ricotta: one with soy milk and the other with blended nuts and tofu. They are both delicious. However, we recommend you try the soy milk method, which yields ricotta that is ridiculously similar to real Italian ricotta.

Is it cheaper to buy or make ricotta? ›

Ricotta cheese is especially reasonably priced, so it is a toss-up if you want to make ricotta to save money. It is cheaper to make your own, if you are going strictly on the price of ingredients, but you do have to factor in your time.

Is there a substitute for ricotta cheese? ›

Cottage cheese delivers a chunky texture, perfect for pancakes or quick bread; remember to give it a blend for smooth textures. Meanwhile, a bit tangier but creamy, Greek yogurt works like magic in dips or baked treats, an easy one-to-one sub for Ricotta shortages.

Can you buy vegan ricotta? ›

There are a few plant-based ricotta cheese brands and alternatives out there. I've used Tofutti ricotta and made my own tofu ricotta to make baked ziti, and both were good. But for this review, I finally tried Kite Hill vegan ricotta cheese, and I was really impressed with the results.

Why does ricotta need egg? ›

For extra creamy ricotta, add in an extra egg, a handful of grated parmesan, and a quarter cup of shredded mozzarella. Eggs help prevent the ricotta from drying out and serve to bind the ricotta so it doesn't become runny.

Is it OK to eat ricotta everyday? ›

It can be enjoyed every day as part of a balanced diet. Ricotta is an Italian word that means 'recooked'. It's made from the whey portion leftover from other cheese making, which is reheated to bring the whey proteins together. The number of serves of dairy you need depend on your age and gender.

Is homemade ricotta worth it? ›

Why make homemade ricotta? Because you can. And because the results are so much better than most of the packaged stuff you can buy, especially at the supermarket. Making it yourself is also less expensive than buying fresh ricotta at a fancy gourmet market.

Which is better for lasagna cottage or ricotta? ›

The key to creating the absolute best lasagna is to use a combination of ricotta and cottage cheese. Ricotta brings the rich creaminess while cottage cheese lightens things up and seasons the whole dish. For even more cheese, we recommend also using shredded Mozzarella cheese and Parmesan cheese (or Pecorino Romano).

Can I use sour cream instead of ricotta? ›

Sour cream: The textures are obviously quite different. But, in a pinch, sour cream can pass as a ricotta alternative in a dish where cheese isn't the star of the show. If you're looking for a sub for lasagna, though, reach for cottage or goat cheese instead.

Which is healthier cottage cheese or ricotta cheese? ›

Although not quite as creamy, cottage cheese has a similar mild taste, fewer calories and less fat than ricotta cheese (81 calories and 1 gram of fat for low-fat cottage cheese vs. part-skim ricotta, which has 171 calories and 10 grams of fat).

Can I use Greek yogurt instead of ricotta cheese? ›

Use Greek yogurt in recipes where ricotta is imparting a creamy texture, like being stirred into a sauce. If you need 1 cup of ricotta and only have 1/2 cup, adding 1/2 cup of Greek yogurt to it would be perfect. But if you're truly out of ricotta, start with 3/4 cup Greek yogurt for every 1 cup ricotta needed.

Does Trader Joe's have ricotta? ›

The aforementioned process is the “traditional” way (or should we say whey) of making ricotta, and as we're never one to shy away from culinary tradition, Trader Joe's Ricotta Cheese follows this authentic tradition to bring our shoppers a classically Italian cheese able to find its way into tons of recipes!

Can I use ricotta without egg? ›

So instead, I made this delicious Eggless Ricotta Frittata! Instead of eggs or tofu, the veggies are bound together with a mixture of ricotta, cream cheese, and parmesan and it is so flavourful and delicious.

Why is my homemade ricotta rubbery? ›

You need about 2 tsps or half a cup of 5% vinegar for making whole milk ricotta. Rubbery curd means not enough calcium has been broken up and the curds are still bonding well. This is especially the case for really good quality milk.

It depends on how hard core they are and what the quality of the ricotta is. Traditional ricotta is made with rennet, which is an animal product, so kinda a no-no for vegetarians. It can be made with vinegar instead, but that creates a different flavor.
